Spicy Bean Burgers on a Bun
Most adults don’t eat enough vegetables, fruits, nuts, legumes, meat, or fish. At the same time, we consume too much red meat, sugary drinks, and alcohol.
In other words: Try a vegetarian day once in a while — for example with these delicious bean burgers!
Legumes are healthy because they help lower LDL cholesterol. They’re also packed with fiber and much more environmentally friendly to produce than meat.
Ingredients for 2 people

1 onion

1 celery stalk

1 tbsp oil

1 small can of kidney beans (drained weight approx. 400 g)

1 slice of whole grain bread

1 small egg
-
½ tbsp tomato paste
-
4 walnut halves
-
A pinch of sambal (spicy chili paste)

4 whole grain buns
Instructions

Clean and finely chop the onion and celery.

Sauté the onion and celery in oil until soft.

Drain and rinse the kidney beans.

Cut the crusts off the bread.

Blend the vegetables, kidney beans, bread, egg, and tomato paste into a smooth mixture using a food processor or hand blender.

Add the walnuts last and season with a bit of sambal for a spicy touch.

Shape the mixture into 4 patties.

Grill the burgers in a grill pan or under the broiler for about 8 minutes until brown and hot.

Serve on whole grain buns.
Tip: Add a refreshing touch with some yogurt dressing and cucumber!
