This week I have a delicious and easy oven-baked dish for you. When we think of comfort food, we often imagine heavy meals that aren’t always very healthy. But don’t worry — this recipe includes plenty of vegetables and is quick to prepare.
Ingredients (serves 2):

1 sweet potato

1 zucchini

225 g halloumi

100 g chorizo
-
2 tbsp Provençal herbs

2 tbsp olive oil (+ extra for frying the halloumi and chorizo)

Salt and pepper (to taste)
Preparation:
Preheat the oven to 200°C (390°F).
Peel the sweet potato and cut it into cubes. Rinse the zucchini and cut it into cubes as well. Place both the sweet potato and zucchini in an oven dish. Add two tablespoons of olive oil and season to taste with salt, pepper, and Provençal herbs. Mix well and bake in the oven for 25–35 minutes until the vegetables are tender.
Cut the halloumi into 10 strips and slice the chorizo into rounds. Heat a bit of olive oil in a small pan and fry the chorizo slices until slightly crispy. In another (grill)pan, heat a bit of olive oil and fry the halloumi strips until golden and crispy on the outside.
Once the vegetables are done, remove the dish from the oven. Mix in the fried chorizo and halloumi strips and serve.
