A delicious vegetarian recipe, packed with vegetables, herbs, and tasty feta! The veggies are seasoned with Vadouvan spices — Indian spices with a French twist — making them warm and full of flavor.
Ingredients (serves 2):

150g pearl couscous

2 carrots

450g pumpkin cubes

1 parsnip

1 tbsp olive oil

1 tsp Vadouvan spices

100g feta
Optional dressing:

Juice of half a lemon

1 tsp fresh mint

1 tbsp olive oil
Instructions:
Preheat the oven to 195°C (383°F).
Peel the carrots and parsnip and cut them into cubes, just like the pumpkin.
Mix the vegetables in a baking dish or on a baking tray. Add the Vadouvan spices and olive oil, and mix well.
Roast the vegetables in the middle of the oven for about 25 minutes until tender.
Cook the pearl couscous according to the package instructions.
Crumble the feta for garnish. If desired, make a dressing by mixing lemon juice, olive oil, and finely chopped mint, and drizzle it over the couscous.
