Today we’re sharing a delicious and healthy recipe: the Mexican salad jar! Colorful, nutritious, and perfect for on the go. This layered salad in a jar is not only tasty but also super convenient for busy days. Just follow the simple steps below and enjoy a flavorful, nourishing meal.
Ingredients (serves 1):

100 g cherry tomatoes, halved

100 g red bell pepper, diced

60 g grated carrots

40 g black beans, rinsed and drained

40 g corn (fresh or canned, no added salt or sugar)

40 g avocado, sliced

40 g red onion, finely chopped

2 tbsp fresh cilantro, chopped

Juice of 1 lime

1 tbsp olive oil

Salt and pepper to taste
Instructions:
Start by preparing the dressing: mix lime juice, olive oil, salt, and pepper in a small bowl and set aside.
Slice and prepare all ingredients as listed.
Take a large glass jar and start by adding the dressing at the bottom. Then, layer the ingredients in the following order: black beans, corn, cherry tomatoes, red onion, red bell pepper, avocado, grated carrots, and top with cilantro.
Seal the jar tightly and store in the fridge until ready to eat. When you’re ready, gently shake the jar to distribute the dressing, pour the salad onto a plate, and enjoy!
