This wrap is perfect when you’re short on time but still want to eat healthy. With just two wraps, you’re already getting half of your daily recommended fiber and a good portion of your protein intake. And they taste delicious! Also ideal for school or work.

Ingredients (serves 2):

1 tsp olive oil

400 g white beans (from a jar)

1 tbsp low-sodium soy sauce

1 tbsp white balsamic vinegar

1 avocado
-
2 tbsp lime juice
-
Handful of fresh cilantro
-
1 clove garlic
-
½ tsp smoked paprika
-
½ tsp mild paprika
-
Pinch of chili or cayenne pepper

Black pepper, to taste

4 whole grain wraps

1 or 2 tomatoes

3 handfuls fresh spinach
Preparation
Rinse the white beans in a colander and let them drain. Heat the olive oil in a pan over medium heat. Add the beans and sauté briefly. Add the soy sauce and stir until it has evaporated. Then add the balsamic vinegar and stir again until evaporated. Remove the pan from the heat and mash the beans with a potato masher.
Cut open the avocado and scoop the flesh into a large bowl. Mash until smooth.
Add the mashed beans, lime juice, spices, and a pinch of cayenne or chili powder (careful, it’s spicy!). Stir well and season with pepper to taste.
Spread the bean-avocado mixture over a wrap. Add a handful of spinach and thinly sliced tomato. Roll it up. Enjoy!
