Who says festive treats can’t be healthy too? These cookies are made with oats and dried fruit – a delicious and nutritious alternative to traditional holiday cookies.
Ingredients (makes 12–16 cookies):

100 g rolled oats (gluten-free if needed)

60 g almond flour

60 ml melted coconut oil

60 ml honey or maple syrup

5 ml vanilla extract

40 g dried cranberries, chopped

40 g dried apricots, chopped

40 g chopped nuts (e.g. almonds or walnuts)

Pinch of salt

Optional: grated orange zest for extra flavor
Instructions:

Preheat oven to 180°C / 350°F and line a baking sheet with parchment paper.

In a large bowl, mix oats, almond flour, and salt.

Add melted coconut oil, honey (or maple syrup), and vanilla extract. Mix well.

Stir in chopped cranberries, apricots, and nuts. Add orange zest if desired.

Roll small portions of the dough into balls, place on the baking sheet, and flatten gently.

Tip: Want to hang them as ornaments? Use your thumb or a small tool to press a hole in the center.

Bake for 10–12 minutes or until lightly golden. Let cool for 10 minutes before serving.
