Skinny Quiche
Quiches are delicious but often very heavy… This version lets you indulge without guilt!
Ingredients for 1 quiche (5 servings):

400 g whole wheat flour

5 eggs

200 ml water

500 g low-fat quark

450 g spinach
-
1 ball of light mozzarella
-
2 cloves of garlic
-
6 cherry tomatoes

Pinch of salt, pepper, Italian herbs to taste
Preparation:
Preheat the oven to 200°C (392°F).
Mix the flour with 1 egg, the water, and a pinch of salt in a bowl. Knead into a smooth dough and press into a greased baking dish. Pre-bake the crust for 10 minutes.
Beat the remaining 4 eggs with the quark. Season with pepper, salt, Italian herbs, and the pressed garlic cloves. Drain the spinach well and press out any excess moisture using a spoon in a sieve. Stir the spinach into the egg mixture.
Pour the filling into the crust. Top with pieces of mozzarella and halved cherry tomatoes. Bake the quiche for 45 minutes until done. Serve with a salad.
Tip:
Goat cheese or blue cheese gives the quiche a wonderfully unique flavor.
