Rösti is a national dish of Switzerland, mainly eaten by the German-speaking population. It consists of grated potato and can be mixed with many other ingredients. You can also make a sweet potato rösti. In this recipe, rösti is used as a base for a tray bake, giving it a unique texture and flavor.
Ingredients (serves 4)

2 medium onions

750 g rösti (grated potato)

4 medium eggs

50 g wheat flour

2 balls of mozzarella

2 zucchinis

67.5 g pesto

40 g arugula
Preparation

Preheat the oven to 220°C (428°F). Finely chop the onions.

Mix the rösti with the onion, eggs, flour, pepper, and optionally salt.

Spread the mixture into a 1 cm thick rectangle on a baking tray lined with parchment paper and bake in the middle of the oven for about 15 minutes, until golden and cooked through.

Meanwhile, slice the mozzarella and zucchinis into slices about ½ cm thick.

Remove the tray bake from the oven. Spread with pesto and layer the mozzarella and zucchini in overlapping rows.

Return to the oven and bake for another 20 minutes.

Serve with arugula.
Tip:
You can also make your own rösti by grating waxy or slightly floury potatoes (do not rinse!) and mixing with salt and pepper.
