This salad takes just 10 minutes to prepare—perfect if you’re short on time or need something healthy to take with you. In addition to avocado, it includes cottage cheese, which is low in calories but high in protein. This helps you feel full for longer and makes it easier to last until your next meal.
Ingredients for 2 servings

150 g lamb’s lettuce (or mixed greens)

1 avocado

3 eggs

A handful of cherry tomatoes

6 tablespoons cottage cheese

3 tablespoons sunflower seeds

1.5 tablespoons sesame seeds

2 tablespoons olive oil

1 teaspoon Herbamare

Pinch of salt and pepper
Instructions
Fill a saucepan with water and bring to a boil. Add the eggs and boil for 8 minutes.
Meanwhile, divide the lettuce between two bowls.
Spoon 3 tablespoons of cottage cheese into each bowl.
Halve and pit the avocado, cut into small pieces, and add to the salad along with the cherry tomatoes.
Once the eggs are done, cool them under cold water, peel them, cut into wedges, and place them on top of the salad with the avocado and tomatoes.
Season with salt, pepper, and Herbamare. Sprinkle with sesame seeds and sunflower seeds, and drizzle with olive oil.
