Mix the chia seeds with 2 tablespoons of water and let them sit for 10 minutes until they form a gel-like consistency.

In a tall mixing cup, combine the quark, cocoa powder, soaked chia seeds, and maple syrup.

Blend with an immersion blender until smooth and creamy. Spoon the mixture into a glass.

Melt the chocolate chips in the microwave or over a double boiler. Pour the melted chocolate over the mousse to form a thin layer.

Chill the glass in the fridge for at least 1 hour, allowing the mousse to firm up and the chocolate to harden into a crisp topping.
