Fish with Mixed Vegetables
Ingredients for 4 people:

4 tbsp olive oil

400 g cod fillet

2 onions

100 g grated young cheese

900 g baby potatoes

800 g stir-fry vegetables

2 tsp dried thyme
Preparation:
Turn on the oven grill. Heat 1 tablespoon of oil in a non-stick pan. Pat the cod dry, season with pepper and a little salt if desired, and cook for about 4 minutes until nearly done, turning halfway through.
Meanwhile, slice the onions into half rings. Heat 1 tablespoon of oil in a wok and stir-fry the onion for 2 minutes on high heat. Stir in the cheese. Remove the fish from the pan and place it in a greased oven dish. Spread the cheese-onion mixture over the fish and grill in the oven for about 6 minutes.
In the meantime, clean the wok, heat the remaining oil, and stir-fry the baby potatoes for 3 minutes. Add the stir-fry vegetables and thyme and stir-fry for another 5 minutes.
Divide the vegetables and potatoes over 4 plates and place the fish on top.
