Homemade, healthy Snickers made with dates, peanut butter, dark chocolate, and peanuts—guilt-free indulgence at its finest!
Ingredients (makes 6 bars):

60 g oat flour

150 g dates

20 g 100% peanut butter

1 tsp vanilla extract

2 tbsp (plant-based) milk

50 g unsalted peanuts

100 g dark chocolate

2 tbsp water

Pinch of salt
Instructions:
Start by making the caramel layer. Soak the dates in warm water for 10 minutes. Drain and blend them in a food processor with the peanut butter, vanilla, milk, and a pinch of salt until sticky and smooth.
Scoop out ¾ of the mixture and set aside in a bowl. Leave the remaining ¼ in the food processor, add the oat flour and 2 tablespoons of water, and blend until combined.
Line a baking tin with parchment paper and press in the base layer. Then spread the caramel layer over it. Sprinkle the peanuts on top and press them gently into the caramel. Chill in the fridge for at least 2 hours.
Slice into bars. Melt the chocolate using a double boiler. Dip each bar into the chocolate using two forks, ensuring they’re fully coated. Place them on parchment paper and let them harden.
