Ingredients (serves 1):
• 1 zucchini (approx. 200g)
• 80g smoked salmon
• 1 boiled egg (optional)
• 1 handful arugula
• 10 cherry tomatoes, halved
• 2 tbsp lemon juice
• 1 tbsp olive oil
• Salt and pepper to taste
• Optional: fresh herbs like dill or parsley
Instructions:

Use a spiralizer or julienne peeler to make zucchini noodles. If you don’t have one, you can also slice the zucchini into thin strips.

Heat a bit of olive oil in a pan over medium heat. Lightly cook the zucchini noodles or slices for 3–5 minutes until just tender but still slightly crisp.

Let the zucchini cool. In a bowl, combine the cooled zucchini with arugula and cherry tomatoes.

Tear the smoked salmon into pieces and add to the bowl.

Make a dressing by mixing lemon juice, olive oil, salt, and pepper. Pour over the salad and toss everything well.

Garnish with fresh herbs like dill or parsley.
