A creamy pasta dish that not only tastes amazing but also makes your body happy? Try this truffle pasta with pulled chicken and mushrooms! Ingredients for 2 servings
• 1 bouillon cube
• 200 g chicken breast
• 140 g whole wheat penne
• 1 egg
• 100 g light cream cheese (or dairy spread)
• 1 heaping tsp truffle tapenade
• 8 sun-dried tomatoes
• 12 cherry tomatoes
• 1 handful of arugula
Instructions
• Bring a large pot of water to a boil with the bouillon cube. Add the chicken breast and let it boil for 3 minutes. Then add the penne and cook for another 6 minutes. After 6 minutes, add the egg and cook everything for another 6 minutes. Total cook time: chicken 15 min, penne 12 min, egg 6 min.
• Meanwhile, slice the mushrooms and sauté them for 5 minutes until cooked.
• Mix the cream cheese with the truffle tapenade. Slice the sun-dried tomatoes into strips and halve the cherry tomatoes.
• Drain the pasta, cool the egg under cold water, and shred the chicken using two forks to make pulled chicken.
• Mix the penne with the truffle mixture, mushrooms, tomatoes, and pulled chicken.
• Top with arugula and half a boiled egg per person.
• Add salt and pepper to taste. Done!
